Aged for two years in one third new French oak and two thirds four year old American oak
Grapes were crushed and de-stemmed, fermented on skins for 9 days and plunged 3 times a day for maximum extraction of colour and flavour. Fruit from Block 4 was set aside for a long snooze in brand new French oak barrels
Southern Adelaide Hills, so close to McLaren Vale we can hear ‘A Day On The Green’ These are our best seven barrels selected for their intensity of flavour and varietal expression. Intense black and blue fruits comfortably dominate the new oak which remains in the back ground giving this wine great complexity, richness, body and length. Nothing added, not even sulphur at bottling. This is so good now decanted for an hour but for those with more patience will see improvement beyond 10 years in the cellar.
